Orphan date February 2009 Unreferenced date August 2007 A barrel barbecue is a type of barbecue made from a 55 gallon barrel . Vents are cut into the top and bottom for airflow control. A lid is used to retain heat. A chimney is not needed because the length of the barrel acts as its own chimney and provides a draft. Short horseshoe like legs are attached for stability. Barrel barbecues are not to be confused with barrel barbecue stoves . These are cut in half lengthwise, where one half acts as the cooking surface and the other half is attached by hinges and acts as the cover. The barrel barbecue has been used at various functions for about 10 years now. It is commonly used during the World of Outlaws car races to cook for racers. Construction Barrel barbecues cannot be bought at any store and have to be made. A barrel barbecue stands upright with a lid. It has a plow disk with handles so that it can be lifted off to dump out the coal on the bottom so the heat from the flames does not melt the bottom of the barrel. It has a hole on the top so some of the smoke leaves the barrel and so that the flames do not go out all together. It has 3 to 4 slots on each side of the barrel so the stainless steel round rods can sit on the barrel without falling in and it is where the meat hangs on the hooks. The hooks are stainless steel rounds that are bent in an S like shape so the meat does not fall into the coal. Content of the book In Savage Barbecue, Andrew Warnes looks at the history of what he calls the first American food from a sociological and historical perspective rather than how cooking techniques differ over time and between regions today, beginning with Christopher Columbus Columbus first meetings with the natives of Hispaniola and explores the ties between barbecue and southern life during and after slavery. It emphasizes that barbecue in the context in which we now know it is not a wholly Cuisine of the United States American cooking style, but has been influenced by European culture and cooking, and explores the racial aspects of the dish. Illustrations include some of the paintings and drawings of the colonial period, which show the Europeans fascination with Cannibalism human limbs on a wooden grill while portraying the exotic nature of cooking meats and fish over fire. The book has four chapters with each one providing a specific way of looking at the historical background, the art, and act of barbecue. He presents a concise view of how barbecue has changed with and throughout the History of the Americas history of America , arguing that barbecue is an attempt to express nothing more than European need to look at practices that occur in cultures outside of the Eurocentric norm as savage and barbaric, thus providing them a way to discuss the violent nature of those who created the cooking style while maintaining and asserting their perceived superiority above them.
