  1. Pan frying

a common alternate way of frying in restaurants Shallow frying Deep frying Saute Stir fry Frying ...Unreferenced date September 2007 Image Pan frying sausages.jpg thumb 225px Pan frying sausages Pan frying is a form of frying characterized by the use of minimal cooking oil or fat compared to shallow frying or deep frying typically using just enough oil to lubricate the pan although, in the case of a greasy food such as bacon, no oil or fats may be needed . As a form of frying, pan frying relies on oil as the heat transfer medium and on correct temperature to retain the moisture in the food. The exposed topside allows, unlike deep frying, some moisture loss and contact with the pan bottom creates greater Browning chemical process browning on the contact surface. Because of the partial coverage, the food must be flipped at least once to cook both sides. Benefits and drawbacks The advantages of using less oil are practical less oil is needed on hand and time spent heating the oil is much shorter. The chief disadvantage of using less oil is that it is more difficult to keep the oil at an even temperature. The moisture loss and increased browning can be beneficial or detrimental depending on the item cooked and its preparation and should be taken into account if there is a choice to be made between pan frying and deep frying. Especially when high temperature frying with lots of oil, it may be advisable to use a splatter guard . Techniques Generally, a shallower cooking vessel is used for pan frying than deep frying. Using a deep pan with a small amount of oil, butter or bacon grease does reduce spatter but the increased moisture around the cooking food is generally detrimental to the preparation. A denser cooking vessel the pan should feel heavy for its size is necessarily better than a less dense pan since that mass will improve temperature regulation. An electric skillet can be used analogously to an electric deep fryer and many of these devices have a thermostat to keep ...   more details

  1. Pressure frying

In cooking , pressure frying is a variation on pressure cooking where meat and cooking oil are brought to high temperatures while pressure is held high enough to cook the food more quickly. This leaves the meat very hot and juicy. A receptacle used in pressure frying is known as a pressure fryer . Pressure frying is mostly done in industrial kitchen s. Ordinary pressure cookers may not be suitable for pressure frying although the issue is hotly debated. Some argue that the laws of physics dictate that like water, oil under that is heated under 15 pounds of pressure cannot possibly become hotter than 250 degrees Fahrenheit. Attempting to pressure fry using a first generation pressure cooker can be very dangerous. Second generation cookers are somewhat safer but can still be dangerous if proper precautions, like opening fill limits, are not taken. ref http www.inmamaskitchen.com FOOD IS ART cliff pressure cooking2.html Pressure Cooking Part Two Nuances and Subtleties A Question and an Answer Bot generated title ref Pressure fryers operate at a lower pressure than pressure cookers. 1. Iowa's Largest Frying Pan

Iowa s Largest Frying Pan is located in the small city of Brandon, Iowa Brandon , Iowa , United States . The pan was built in 2004 by men of the local community of Brandon. It took these men a little over forty volunteer man hours to construct the frying pan . It is made out of scrap steel that was donated by local farmers. The pan was originally built as a promotional tool for the Brandon Area Community Club s semi annual fundraiser, the cowboy breakfast . They chose to build a large frying pan because the cowboy breakfast is cooked over open flames using mostly cast iron frying pans. They later found out that in Long Beach, Washington the world s largest frying pan existed measuring 14 feet 6  inches in total length and 9 feet 6  inches rim diameter, a mere 3  inches larger than Iowa s largest frying pan. After much research the creators realized that there were many frying pans that claimed to be the world s largest pan so they just called it Iowa s largest frying pan.
