The hock , or gambrel , is the joint between the tarsus skeleton tarsal bones and tibia of a digitigrade or unguligrade quadrupedal mammal, such as a horse , cat , or dog . This joint may include articulations between tarsal bones and the fibula in some species such as cats , while in others the fibula has been greatly reduced and is only found as a Vestigiality vestigial remnant fused to the distal portion of the tibia as in horses . It is the anatomical Homology biology homologue of the ankle of the human foot . While homologous joints occur in other tetrapod s, the term is generally restricted to mammals, particularly long legged domesticated species. Horse Although the tarsus refers specifically to the bones and joints of the hock, most people working with horses refer to the hock in such a way to include the bones, joints, and soft tissue of the area. The hock is especially important in equine anatomy, due to the great strain it receives when the horse is worked. 1. Hock (wine)

Hock is an English language English term for German wine , sometimes wine from the Rhine regions and sometimes all German wine. ref name OCW http www.winepros.com.au jsp cda reference oxford entry.jsp?entry id 1529 Oxford Companion to Wine Hock ref It is short for the now obsolete word hockamore. The term is a corruption of the name of the Germany German town of Hochheim am Main Hochheim on the Main river Main river in the Rheingau wine region Rheingau wine region. The term seems to have been in use in the 17th century, initially for wines from middle Rhine, but in the 18th century became used as a term for any German wine sold in Britain. ref name OCW It seems probable that Queen Victoria s visit to Hochheim and its vineyards during harvest time in 1850 has contributed to the continued use of the term hock . Modern usage Today the term hock is occasionally seen on bottles of mostly cheaper wine in the United Kingdom , in a similar way to claret . In Australia , it is still known as the main ingredient of an old fashioned but cooling summer drink named hock, lime and lemon . Hock burns are marks found on the upper joints of chickens and other birds raised on broiler farms . These marks are where the ammonia from the waste of other birds has burned through the skin of the leg, leaving a mark. Many meat processors now remove these marks as they discourage customers. 1. Ham hock

notoc Image Schwein Eisbein.png thumb 267px Ham hock position A ham hock is the joint between the tibia fibula and the metatarsals of the foot, where the foot was attached to the Domestic pig hog s leg. It is the portion of the leg &ndash also known as pork knuckle &ndash that is neither part of the ham proper nor the foot or ankle, but rather the extreme Shank meat shank end of the leg bone and the associated skin, fat, tendons, and muscle. Uses Since this piece generally consists of much skin, tendons and ligaments, it requires long cooking through stewing or braising to be made palatable. The cut of meat can be cooked with greens and other vegetables or in flavourful sauces. It is often added to soups with the meat being added to the soup prior to serving. The meat of particularly meaty hocks may be removed and served as is. Ham hocks, like hog jowls pigs cheeks , add a distinctive flavor to various dishes. This is particularly true for collard greens, mustard greens, cabbage, green beans and navy beans. Ham hocks are essential ingredients in soul food and other forms of American Southern country cooking. Eisbein is the name of the joint in north German language German , and at the same time the name of a dish of roasted ham hock, called Schweinshaxe in Bavaria , Stelze in Austria and W dli in Switzerland. Golonka is a very popular Polish barbequed dish using this cut. They are also popular when boiled with escarole, more commonly called endives , in Italian American cuisine . Invertebrates are a vast and very diverse group of animals that includes sponges , echinoderm s, tunicate s, numerous different phylum phyla of worms, mollusc s, arthropod s and many additional phyla. Single celled organisms or protist s are usually not included within the same group as invertebrates. Invertebrates are 97 of all named animal species , and because of that fact, this subdivision of zoology has many further subdivisions, including but not limited to Arthropodology the study of arthropods , which includes Arachnology the study of spiders and other arachnid s Entomology the study of insect s Carcinology the study of crustacean s Myriapodology the study of centipede s, millipede s, and other myriapod s Malacology the study of mollusk s Invertebrate paleontology the study of fossil invertebrates These divisions are sometimes further divided into more specific specialties. For example, within arachnology, acarology is the study of mite s and tick s within entomology, lepidoptery is the study of butterflies and moth s, and so on.
